I’ve never really been into cheese, I don’t even eat cheese on my pizza…which I guess means it’s not really a pizza then. Anyways, I’m not really into cheese but I have always always loved Feta!
When I was little I would sneak into the kitchen and steal whole wheels from the jar hoping my mom wouldn’t notice, she of course always knew I was the culprit and I’d get a stern talking to! When I moved our of home I clearly remember what my first grocery run included…fabric softener, a few packs of two minute noodles and a big jar of Feta!
This week I’ve teamed up with Clover and to share a really simple and amazing mason jar recipe to try out this winter, there’s also a really awesome #loveCloverFeta competition to enter so read on.
While winter means we need warm comfort food it doesn’t mean we need to be guzzling down heavy meals all day, especially if like me, you don’t often have meat in the house. Angie and I created this tasty recipe to fill your belly and keep you warm while avoiding feeling like you’re weighed down by a lump of cement in your stomach, and like most of my recipes it’s also relatively fuss free!
- 3 Tablespoons Clover Feta Black Pepper
- 1 Tablespoon Clover Feta Traditional
- 1 Tablespoon Clover Feta Herb
- 1 Teaspoon Olive Oil
- 100g Lentils
- 100g Couscous
- 150g Mixed Vegetables
- Micro herbs for decoration
- Boil lentils for 20 minutes until soft
- Pre prepare couscous, mix in olive oil and cover to keep warm
- Sauté mixed veggies until soft, we used tomatoes, carrots and aubergines but it really is up to you
- Crumb feta but keep flavours separate
- Begin layering each ingredient until jar is full and garnish with micro herbs and salt
