Easy as Christmas Pie right?

For starters I did a board of salmon and trout roulades, some delicious bread that I warmed up in the oven and a few bowls of chip sticks.
I chose to make their easy to cook spicy plum and raspberry free range duck roast which has the most delicious stuffing and only takes 90 minutes to cook. If you wait until the duck is almost done and throw some fresh raspberries into the tray it makes a delicious gravy.
With the duck I made a delicious and easy spinach, rocket and watercress salad with sautéed Shiitake mushrooms with caramelised cinnamon seed sprinkle and feta and roast sweet potatoes with grated Gruyère cheese. The sweet potatoes also took about 90 minutes to cook so don’t wait too long to pop them into the oven.
