This meal is very similar to something I would make on a daily basis for Craig and myself and because it’s what I would call a ‘run of the mill’ meal it’s super affordable coming in at only R31.
My friend Melissa from The Truffle Journal introduced my to the concept of bowl food and since then I’ve really been enjoying easy meals that don’t take much prep that you can just throw into a bowl with not too much fuss. If you haven’t you should totally check her blog out she has the most incredible recipes. I’d really recommend looking at bowl/Buddha Bowl recipes if you’re in the market for quick healthy meals.
This recipe also includes Frys Chicken Style Strips, obviously if you eat meat you’ll just substitute Frys for a protein of your choice. I only recently discovered how many protein rich meat free products Frys has, I honestly thought they only did burgers and sausages up until a few weeks ago! All Frys products are super high in protein and they are sometimes more affordable than a meat alternative so if you’re looking to save money it’s definitely worth looking into.
Last but not least I use a rice cooker to make my rice, it may seem a little unnecessary…until you taste rice from a rice cooker!
I also made ice tea for the first time! I’ve been trying out some of new flavours and they’re damn delicious!
How To Make It and What You’ll Need
- 1 cup of Jasmine Rice R3
- 1 handful of Baby Marrows (about 5 or 6) R5
- 1 handful of Baby Pattypans (about 3 or 4) R5
- 1 Radish R1
- 2 large Carrots R3
- 1 handful of Sugar Snap Peas R4
- 2 cups of Frys Chicken-Style Strips R10
- Cayenne Pepper
- Truffle Salt/Oil
- Preheat the oven to 280°C
- Chop the Pattypans and Baby Marrows into strips/chunks
- Sprinkle the Baby Marrows with Cayenne Pepper
- Roast the Baby Marrows and Pattypans for about 20 minutes or until slightly charred/crispy
- After the Pattypans and Baby Marrows are in the oven boil the rice
- Slice the Carrots and boil
- Once the Carrots are boiled place them in a blender with some Truffle Salt and blend until smooth and set aside
- Place the raw Sugar Snap Peas into the blender and blend until you get a rough mixture
- Finally place the Strips into a pan and cook until brown
- Thinly slice the raw Raddish
- Plate and Eat!

CAYENNE PEPPER – Cayenne is a well-known digestive aid. It stimulates the digestive tract, increasing the flow of enzyme production and gastric juices. This aids the body’s ability to metabolize food (and toxins). Cayenne pepper is also helpful for relieving intestinal gas. It stimulates intestinal peristaltic motion, aiding in both assimilation and elimination
PATTY PANS- Pattypan squash is low in saturated fat and sodium and contains no cholesterol. It provides an excellent source of vitamins and minerals including vitamin C vitamin B-6, magnesium, potassium and Vitamin A.
SUGAR SNAP PEAS – Sugar snap peas contain a high amount of vitamin C, vitamin K, and vitamin A. It also contains a lot of vitamin B varieties, such as folate, riboflavin, niacin, and thiamine. Each and every one of these vitamins is beneficial to your health, especially when consumed daily.
CHICKEN STYLE STRIPS – Everything from Frys is made from a blend of vegetable proteins which come from legumes and grains. Fry’s is a complete protein containing all the essential amino acids their products are also a source of fibre and are naturally cholesterol free.
