There are three things a girl needs in life: sun, fun and Maple Syrup. Okay…not quite but all three of those things are pretty awesome. This weekend, thanks to the Woolworths Flavour Society, my friends and I has a summer picnic at my apartment’s shared pool inspired by Maple Syrup. We had our lunch down by the pool and because no-fuss baking in summer is amazing, I tried to keep everything as simple, and as tasty as possible, in an effort to be healthy and because most of my guests were Vegan, almost everything at the lunch was free of animal products, except of course for the obvious.

Maple Syrup Champagne Cocktail

No pool party would be complete without a delicious cocktail, and this is probably one of the most delicious and simplest recipes I’ve ever worked with.

All you need is:

  • a punnet of strawberries, washed and cut in half
  • a cup of maple syrup
  1. Wash the strawberries and cut them in half
  2. Put them into a saucepan with the maple syrup and simmer till the syrup turns a pink colour
  3. Cool and place into a glass with some bubbly

If you haven’t tried that Miso & Maple Flavoured Full Fat Cream Cheese, you need to right now!

Maple Glazed Tofu

For mains I was adamant I didn’t want to create a dish that was too sweet but still incorporated the maple flavours. Maple glazed tofu is a great mix between sweet and savoury, and of course it’s incredibly easy to make.

All you need is:

  • a standard box of Tofu (340g)
  • a teaspoon of coconut oil
  • two cloves garlic
  • three tbsp of soy sauce
  • two tbsp of pure maple syrup
  • one tbsp of rice vinegar
  1. Brown the tofu in the coconut oil
  2. Crush the garlic and mix with all the other ingredients
  3. Cook until sticky

Maple Syrup Salad Dressing

I think this dressing was one of the biggest hits of the day and I’ll definitely be using it again.

All you need is:

  • two tbsp of pure maple syrup
  • one cup of balsamic vinegar
  • one cup of olive oil
  • two tbsp of mustard
  • fresh chives
  1. Mix all the ingredients together and pour over cold salad

We also tried out the Maple glazed trout which you can find at most Woolies stores and it’s incredibly easy to cook. For pudding we had a range of cakes all infused with Maple Syrup and fully Vegan, I used flavours like, pears, coconut milk, coffee and cocoa powder but they were so great they deserve a blog post all on their own.

Easy Vegan Milkshake

As part of our dessert I created a delicious batch of Vegan milkshakes that I will be drinking everyday from now on.

All you need is:

  • one carton of almond milk
  • one slab of 100% dark chocolate
  • one tsp of maple syrup
  1. Mix all the ingredients together and drink!
